To understand Adana's cuisine, you must first understand the geography that grows it. The soil of Çukurova, the climate of the Taurus, the Seyhan and Ceyhan rivers, Mediterranean coastlines and biodiversity across elevations — these are the foundations of Adana's gastronomic character.
"Terroir" describes not only the soil where a product grows, but also its climate, water, methods of production, human knowledge and cultural setting.
Adana's terroir is nourished by fertile agricultural plains, citrus groves, grain and vegetable production, livestock culture, aromatic plants of the Taurus, beekeeping and honey, fishing along the Karataş and Yumurtalık coasts, and rural and urban kitchen traditions.
By making this wider ecosystem visible, the festival aims to tell Adana's cuisine not through a single dish, but through all the natural and cultural values that create it.
